mini blueberry muffins | krumbsco recipe

There is literalllyyyy no better time to try blueberry muffins 🫐... & I can say in all honesty, these homemade ones are some of the best we’ve ever tried 🤤

Plus they’re healthy because they contain fruit... right?! 🤪

Using our krumbsco Oven Size Muffin Tray to make the perfect mini bite-sized snack 💪🏼

Adding the crunchy streusel on top is totally optional but totally worth it in my opinion 💓

FULL RECIPE BELOW 👇🏼

ingredients: 

  • 1/2 cup milk
  • 1 egg
  • 2tbsp oil
  • 1.5tbsp melted butter
  • 1 & 1/4 cup plain flour
  • 1tsp baking powder
  • 1/2tsp baking soda
  • 1/2 cup coconut sugar (or any sugar you prefer)
  • 1/2 punnet blueberries (60g)

optional addition of streusel: 

  • 1tbsp flour
  • 2tbsp sugar
  • 1/2tsp cinnamon
  • 1tbsp cold butter 

method: 

  1. Mix all wet ingredients together in a bowl
  2. Mix all dry ingredients together in a separate bowl
  3. Combine wet & dry ingredients
  4. Add the blueberries and mix
  5. Add the mixture to your krumbsco mould
  6. Optional: add all streusel ingredients to a small bowl and mash with a fork until crumbs form, add crumbs to tops of batter
  7. Bake on 170 for around 25 mins or until cooked through & golden!
