choc chip chickpea cookies | recipe
An easy favourite with a bonus protein boost thanks to a whole tin of chickpeas! A great one for the lunchbox.
Ingredients:
- 120g butter
- 1/2 firmly packed brown sugar
- 2 eggs
- 1 tbs vanilla essence
- 1 can chickpeas - drained and pat dry with papertowel
- 3/4 cup chocolate chips - I use half milk, half dark chocolate
- 1 cup self raising flour
- 1/2 cup rolled oats
- 1/4 tsp salt
Method:
- Put butter and sugar in Thermomix and mix 20 seconds, speed 4 to cream
- Add eggs and vanilla and mix 3 seconds, speed 5
- Add chickpeas and chocolate chips and mix speed 3, 5 seconds, reverse
- Add flour, oats, salt and mix 20 seconds, speed 3
- Bake in 170 degree oven for 12-15 minutes or until browned
- Leave on tray to cool completely
**Non-Thermomix: All of the above can be made without a thermomix. Steps 1 and 2 can be mixed with electric beater, and steps 3 and 4 can be stirred by hand
